Ingredients
16 piece(s)
- 30 g pepitas
- 40 g sunflower seeds
- 5 dried apricots
- 10 dates
- 125 g Butter
- 100 g raw sugar
- 1 tablespoon honey
- 95 g rolled oats
- 95 g rice bubbles
- 35 g sesame seeds
- 20 g Shredded coconut
Recipe's preparation
Grease a slice tin and line with baking paper, extending above the sides.
Place pepitas, sunflower seeds, apricots and dates into Tmx. Chop speed 6, 7 seconds.
Remove from the bowl and set aside.
Melt the butter, sugar and honey together at 90 degrees, 4 minutes, speed 1.
All all other ingredients including the seed/apricot/date mix and combine reverse speed 3, 30-40 seconds, scrape sides down part way through if needed.
Press the mixture into the tin (use the back of the MC to press it down).
Bake at 180 degrees for 20 minutes - but watch them closely, they can go from cooked to over-cooked very quickly!
Let cool in tin and then remove and slice into bars.
These freeze really well.

I love these but I always have to change up the recipe. Halve the sugar add 40 gms macadamia nuts and 60 gms naked ginger. I didn't have rice bubbles so used up some cocoa pops. All work a treat.

These are really good. Simple to make - I cut the sugar down to 70g,but otherwise followed the recipe. I slightly overcooked them, after 20 mins I thought they needed slightly longer but with hindsight they would have been fine. Delicious and a nice light texture.

Great recipe. I reduced the sugar to 70g, however, next time I will omitt altogether. As previously suggested, I added popcorn as I didnt have rice bubbles and added extra dates as I didnt have apricots. I cooked, cooled and moved it to the fridge so it was easier to cut.

I just made these and they are the best muesli slice I have made. I didn't have rice bubbles so I used popcorn and they were wonderful. (As others have said I will halve the sugar next time).

I didn’t add the pepitas or sunflower seeds, but did add some cranberries. First time I made it I had mess everywhere and it crumbled a bit, but second time I pressed it into mini muffin pans. Made 24 muesli bites which came out perfect, and no crumbly mess. Good snack or kid size too!

Oh my god these are so good. I added some choc chips as I had some spare in the fridge. I only did 30g of sugar but to be honest the next time I make them I won’t add any as they are sweet enough from the dried fruit, honey and choc chips.
Thank you for sharing the recipe. I have to ration them with my partner as he will eat them all in a day.

Quite yummy however I reduced the sugar to 25g as per comments... It's definitely sweet enough but I think it needs the sugar to stick together. Need to up the honey if you're going to reduce the sugar.

Yum! I didn’t have dates or apricots so I subbed with sultanas. I also swapped sesame seeds for flax seeds. Delicious recipe and I’m sure it will become a family favourite.

These are delicious! I didn’t have apricots so added dried blueberries & cranberries. Used half the sugar but I personally felt they are still quite sweet so will exclude sugar all together next time as there’s enough sweetness from the dried fruit. I also just refrigerated instead of baking. Great lunchbox snack 👍🏻

2 of my 3 kids loved these. I redecuced the sugar. I used GF cornflakes and rice malt syrup instead of honey. I was short of butter so I also used coconut oil. I also put it into the fridge once cooled to avoid it crumbling.

Liked by all but really crumbly. Reduced sugar, added cacao nibs and used chia seeds as I didn't have sesame seeds. Cooked for 18 minutes, maybe they were over cooked? Flavour really nice. Rating isn't coming up - 4 stars

Delish. Swapped out the dates for other dried fruits i had, and reduced the sugar slightly.
YUM!! I followed recipe
YUM!! I followed recipe ingredients exactly but cooked at 170c for 18mins in convection oven. Next time might reduce sugar a little as a tad sweet for me.

I usually make these once a week , a great snack. I use craneberries in place of Apricots .

I love these! I added 70g "Power & Go" mix from Coles scoop & weigh section in place of the sunflower & pepitas, as I didn't have them. I also add a little dried pineapple with the apricots & dates. I freeze them in bar-portions, take them to work straight from the freezer & they are delicious.

Kids love these. I had to trial and test a couple of things with quantities but they are a great lunchbox treat. Don't overlook and let cool COMPLETELY before cutting

I love this recipe! They are delicious as is, you can swap around ingredients to suit tastes & what you have on hand. Cool completely before cutting is the key I think. I wrap and freeze them in individual serves, taste perfect. Thank you
These are so yummy!! Hubby
These are so yummy!! Hubby absoluely loved them too. I only added 35g of raw sugar instead of 100g and i also added raisins and dried cranberries! These will be a weekly thing in our house now.
This recipe is great, so much
This recipe is great, so much that I've just about demolished the lot! I used cornflakes instead of the rice bullbes, and excluded the sugar. I added an extra tablesoon of honey and some chia seeds. Turned out wonderful. Definitely a hit. I baked mine as per the instructions and then put it in the fridge to set. They turned out really well, not too hard and slightly chewy. I'll be making these again but migth try refrigerating only as some of the comments have suggested just to see the difference.
Worked out nice thank you. I
Worked out nice thank you. I added cranberries with less apricot. i am going to spoil the healthy bit a little and lightly dip the base in chocolate to help hold together!

Made my first batch last
Made my first batch last weekend, i replaced the rice bubbles with extra oats, added chia seeds and added desiccated coconut instead of shredded. These turned out even nicer than i anticipated. Will be making more today for the kids for nut-free daycare snacks.

Lovely bars. I made them with no sugar and they were very nice. Thanks for posting

These are fabulous - I've got my second batch in the oven now. I wasn't sure which dates to use, so I pitted some Medjool dates I had on hand, and as per the comments I halved the sugar.Batch 1 As per the recipe except that I only had diced apricot, so I used 110 grams (all I had left in the bag!) and only had 70grams of rice bubbles. They are really good!
Batch 2No more apricots or rice bubbles, so I used 100g Craisins and a handful of currants and replaced the rice bubbles with cornflakes. Only had half the sunflower seeds, and my son doesn't like sesame seeds, so I left them out.
This is such a versatile recipe! Thanks for sharing
**edited to add - make sure you press them down well and cool them in the tray to make sure they stay together. I just made another couple of batches and was keen to put the second lot in the tray, so flipped out the first batch while still warm without thinking. :O. Not a good plan....

I'm on my second batch of the weekend - everyone went back for seconds on the first!
I halved the sugar and used coconut suga and added some chia. I let it cool completely before cutting and it held together perfectly. So god for lunch boxes and work snacks.
Love the muesli bar.
Love the muesli bar. However, find mine are really crumbly and don't hold shape easily. Any suggestions?

Delicious!!! I halved the sugar and it was still pretty sweet. Will omit the sugar completely next time. Threw in a handful of chia seeds for good measure.

Oh these are pure yum. I dropped the temp on my fan forced oven to 170 and they were cooked perfectly. I also allowed them to cool completely before slicing and they seemed to hold their shape well. These will be a regular feature in my kids lunchboxes. I look forward to experiementing with different ingredients too. Thank you so much for sharing
Happy Thermomixing!

I used 95g puffed rice
I used 95g puffed rice instead of rice bubbles, and it seemed way too much for the butter/fruit mixture... Not sure why? I halved the sugar. It's currently in the oven, can't wait to try.
