- 200 grams sweetened condensed milk
- 125 grams Butter
- 250 grams Milk arrowroot biscuits
- 1 tablespoon Lemon Rind (finely grated)
- 55 grams Desiccated/Shredded Coconut

- 20 grams soft butter

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
Crush biscuits on speed 7, 10 seconds.
Add lemon rind and coconut and mix speed 5, 10 seconds. Set aside and wipe out bowl.
Add butterfly and place condensed milk and butter in TM and mix 3 minutes 80 degrees, speed 2.
Add biscuit crumb to the condensed milk and butter mix and stir speed 2, 20-30 seconds.
Press mixture in greased lamington tin. Refrigerate for 1hr.
Using cleaned and dried TM bowl, combine sifted icing sugar, lemon juice, and soft butter into TM. Stir 30 seconds, speed 3.
Spread over chilled base and sprinkle with coconut. Refrigerate until icing is set.
Cut into small squares (makes between 18 - 30 depending on the size you want).

I’ll make this recipe again. It’s amazing how much better fresh lemons are to packaged juice. This tastes great. I’ll make less icing next time and make it a bit thicker. I used a smaller slice tray than a lamington tray and the thickness is perfect.
