Tangy passion fruit slice

Ingredients

condensed milk

  • 80 grams water
  • 120 gram white sugar
  • 60 gram Butter, home made is nice
  • 120 grams Dry Milk Powder, full cream

Passion fruit topping

  • 200 grams passion fruit pulp, (About 12 passion fruit)
  • 1 lemon, Juice only

Base

  • 100 grams caster sugar, Or raw or white, blitzed for 3 seconds, sp 9)

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Passion fruit pulp
  1. Preheat oven to 180C. Prepare a slice tray by lining wiith baking paper. Set aside.

    Add the pulp from all of the passion fruits except 1 to the TM bowl. Blitz for 5 seconds on speed 8. Strain the mixture to get the seeds out. Add the pulp from the remaining passion fruit to the strained juice. Weigh to ensure you have 175-225 grams of juice. Add more passion fruit juice if needed. Set aside. Rinse bowl.

  3. Place the butter in TM bowl and melt for 3 min/60C/speed 2. Continue if needed until butter is melted.Add remaining base ingredients and combine 10 seconds/speed 4. Scrape sides of bowl and repeat.

    Tip into slice tray and press down firmly to create a firm biscuit base. Bake for 10-15 minutes until golden around the edges. Set aside to cool.

  4. Condensed Milk
  5.  Whilst base is baking, wash bowl. Put butterfly into TM bowl

    Put all condensed milk ingredients into TM bowl and mix 6 mins/90C/speed 4. When finished, remove butterfly then blend for 20 seconds, starting at speed 6 and increasing to speed 9 (I found this gives a much smoother condensed milk).

    Alternately, if using canned condensed milk skip this step and just tip condensed milk into clean TM bowl.

  6. Passion fruit slice topping and construction
  7. Add passion fruit pulp & lemon juice to prepared condensed milk. Combine 10 sec/Counter-clockwise operation/sp 4.

    Pour over base then bake again for 10-15 minutes until just firm. Allow to cool to room temperature then place in fridge to chill completely. Cut into squares to serve. Store in fridge.

Perfect way to use up lots of passion fruit when your vine is fruiting!

If you don't want to prepare your own condensed milk you can use a can instead.

I've made this using store bought gf flour mix and it works very well too.
