Oreo and Vanilla Bean Ice-Cream Cake

Ingredients

Vanilla Bean Ice-Cream Cake

  • 100 grams white sugar, Can be varied if needed (brown, organic etc)
  • 1 litre full cream
  • 395 grams sweetened condensed milk, (Ok to use 99% Skinny Version)
  • 1 level teaspoon Vanilla Bean Paste
  • 1-2 packages Oreo Biscuits

Recipe's preparation

    Oreo and Vanilla Bean Ice-Cream Cake
  1. Crush 1-2 packets of Oreo biscuits for approx 20 secs. Start slowly and increas to Speed 10. Consistency required is smooth crumble without chunks. When ready set aside in seperate bowl.

  2. Place sugar into the TMX bowl for 20 secs on speed 10.

  3. Add the cream, vanilla bean paste into TMX Bowl. Add butterfly and whip for approx 20 secs on speed 4 or until cream is whipped (this will vary depending on how fresh your cream is) Be careful not to overwhip.

  4. Add Sweetened Condensed Milk & fold through for about 5-8 secs on speed 2.

  5. Prepare a lined tin or bowl (I use cling wrap in a cake tin - comes out easy with not much "sticking")

  6. Using a laying technique; add cream mixture to lined tin followed by generous sprinkling of crushed Oreo mixture. Continue until all mixture used or tin is full.

  7. Freeze overnight for best results on a level surface - Leave out for 1-2 minutes if needed to help tip the ice-cream out of the tin onto a serving platter.

Tip

This Ice-Cream is very creamy and the servings do not need to be a large amount (Palm size is sufficent when cutting and serving at a party - all ok to pig out at home!).


When tipping the cake out onto serving platter, ensure the platter is cool/cold to avoid the Ice-Cream cake melting as soon as it hits the platter! (maybe even pop into the fridge/freezer for a few minutes before serving)


Don't be afraid to experiment with different ingredients when trying different layering e.g. fresh fruit, berries - anything!!

    I have just made this, we will see tomorrow if it has worked okay! I didn't realise you had to put the crushed Oreo aside, I just kept adding all ingredients to together then put in cake tin.

    Easy, great instructions. I'd vastly reduce the sugar though. Remember to make it the day before! Will use this recipe again and make my own combo's. Nice to be able to make icecream without all the additives (except those in the condensed milk). Thank you.

    This is a great recipe and was a hit for a birthday cake.  Everyone loved it!  I have even tried crushing chocolate coated honey comb and stirred it through... yummo.. Thanks for the wonderful recipe tmrc_emoticons.)
