Steamed Banana Nut Puddings ( converted from better homes and gardens)

Puddings

  • 75 grams Butter
  • 2 banana, Very ripe
  • 1 banana, To be sliced for decoration
  • 1 egg
  • 100 grams rapadura sugar or raw sugar
  • 160 grams Milk, Of any kind, can be nut milk, dairy free, or even coconut milk
  • 140 grams Self Raising Flour
  • Half cup of nuts, Pecan or Walnut or I even used crushed peanuts

Caramel Sauce (optional)

  • 120 grams rapadura or brown sugar
  • 100 grams Butter
  • 200 grams cream
  • 1 teaspoon vanilla

Recipe's preparation

    Puddings
  1. Melt butter in TM 40 sec, 50 degrees, speed 4


    Add 2 very ripe bananas, egg, milk and sugar to TM bowl 5sec, speed 6 until combined with butter


    Add flour 4-5 sec speed 4 until all combined. Add your choice of nuts counter-clockwise operation sp 2 until nuts combined (approx 2-3 sec)


    Position moulds in Varoma and tray. Add sliced bananas in base of moulds, and pour over the pudding batter.


    25 mins (or longer if using muffin size moulds ) Varoma Temp speed.


    OPTIONAL: Rest puddings while making Caramel Sauce, or serve Warm with Vanilla Icecream and a few extra nuts sprinkled over the top

    Place all into TM bowl and cook on 80C, speed 1 for 2 minsScrape down sides if needed, cook for additional 3 minsPour over warm puddings

Enjoy! These puddings can be frozen (without sauce) to be reheated or even popped in a school lunch box for a morning tea treat! (If not a nut-free school, or leave the nuts out)

    Maybe they do need the sauce, which I skipped because I had no time (and no cream).
