Moroccan Pearl Cous Cous with Steamed Chicken

  • 1 1/2 tsp cumin
  • 1/2 tsp ginger
  • 1/2 tsp Grnd Coriander
  • 1/2 tsp allspice
  • 400 grams chicken
  • 250 grams Pearl Cous Cous
  • 1 red capsicum
  • 1/2 Zuchhini
  • 1/2 lemon zest
  • 1 bunch parsley
  • 60 grams currants
  • 1 tbsp Vege Stock Concentrate
  • 500 grams water
  • 20 grams olive oil

Recipe's preparation

  1. Combine spices. Brush oil with some of the spices onto chicken

    Place into varoma tray. Fill TM bowl with 700g water and steam for 20 mins/Varoma/speed 1

    Once cooked, place into Thermoserver

    Chop parsley and lemon zest 4 sec/speed 7

    Add oil, capsicum and zuchhini. Saute 3min/100d/Counter-clockwise operation/speed 1

    Add cous cous, remaining spices, water, and stock. Cook 10min/90d/Counter-clockwise operation/speed 1

    Stir in currants, slice chicken and serve.

  • I used a whole Zuchinni, and

    I used a whole Zuchinni, and added half an onion and a Tblsp of tomato paste. Took longer at each stage to cook.  Added spinach leaves and served. Yummo....our local cafe sells this cold as a salad! I think they might have a bit of honey in their's too. Will try that next time
