Porcupines (Meatballs)

Ingredients

6 portion(s)

Meatballs:

  • 1 brown onion, Peeled & halved
  • 2 clove garlic, Peeled
  • 1 zucchini, Roughly Chopped
  • 1 carrot, Roughly Chopped
  • 500 gram Beef mince
  • fresh mint, To taste
  • fresh parsley, To taste
  • salt & pepper, To taste
  • 20 grams Bbq sauce
  • 1 dash worchester sauce
  • 1 egg
  • 100 gram Uncooked rice

Tomato Sauce:

  • 750 gram tomato passata
  • 1 tablespoon Veg Stock Paste
  • 1 teaspoon sugar
  • 300 grams water

Recipe's preparation

  1. Place onion, garlic, zucchini, carrot and herbs in TM bowl, mix 5-10 secs sp 7 or until desired consistency (I like it quite fine). Scrape down sides of bowl.

    Add remaining meatball ingredients and mix reverse / sp 5 until all combined

    Roll 1 teaspoon of meatball mixture into small balls and place on varoma trays, one layer per tray.

    Empty tomato passata into TM bowl, water (fill passata jar with water and shake to get remaining out of the bottle), vegetable stock and sugar.  Mix sp 4 for 4 secs.

    Place varoma on top and cook for 1 hour, varoma temp, speed 3.  Check tomato sauce after 30 minutes and top up with water if it’s reduced to much.  Aim to finish with 500mls sauce.

    Place cooked porcupines in thermoserver and pour over tomato sauce.

    Enjoy!

    Serve with a fresh green salad.

Tip

If the meatballs are cooked before the recommended 60 mins, remove them and keep warm in a Thermoserver. However the beauty of steaming is they will stay moist due to the steam cooking method.  You may need to continue cooking the sauce to reduce it to a thicker consistency.

I use small zucchinis and carrots, if thery are large you may need to squeeze out some of their liquid as this will cause wet/sloppy meatballs.  If you think the mixture is to wet, add some breadcrumbs or extra rice to saok up some of the moisture.

    My meatballs turned out really well- they look hilarious! They were cooked in 30 minutes and the sauce was fine after that amount of cooking time. I didn't have passata so I used tinned tomatoes and the sauce was yummy. Thanks for sharing your recipe.

    Maybe I’m missing something? My meatballs don’t look porcupine-ish!
    Are you meant to roll the meatballs in the rice instead?
    There cooking now so will see what happens....


    Nevermind - I will learn patience..... Saw the magic once they were cooked.
    Loved the novelty of these for the kids while being pretty tasty!

    carlacancook: You could take the meatballs out after 30 mins and keep them warm in your Thermoserver , at this stage add your veggies and keep reducing the tomato sauce. Cook veggies to your liking.

    My husband loves porcupines and have normally followed a recipe with tomato soup and done in a pan. Thought I would try a thermomix recipe for a change. Recipe was ok, I added bread crumbs and I found the meatballs to be very soft. I do however prefer the flavor better with tomato soup then passata. Might try this recipe again but change it up with tomato soup. Thank you for sharing your recipe tmrc_emoticons.)

    Made these tonight and hit some serious mum points! It was sloppy but went with it. I had a little mixture that didn't fit so I fried them up and put them in the thermal bowl to wait for the rest.
    We had them with mashed potatoes, absolute 10/10! It will be a regular in our house, thank you!!!

    So yummy. I didn't have time to steam for the hour, so just popped it all into a frypan covered and cooked for around 30 mins. I thought when reading the recipe that mint would be a bit weird, but it gave a very subtle nice flavour. Will keep this one in a regular rotation from now on.

    Absolutely delicious. ...i was so worried as i normally make these in the saucepan. ..they are my hubby's favorite. I was concerned the meatballs would have a poached flavor but they were really tasty ..hubby was very impressed! 

     I used 800g Tin of heinz big red tomato soup and 3/4 tin water (no stock) instead of pasatta just because that's what i normally use when cooking them in the saucepan.  I also added 1 heaped tsp beef stock powder to the meatballs and used parsley, mint and rosemary for the herbs.  I rolled mine in 1/2 tblsp sized balls  and cooked for same time as recipe.  Definitely on the favourites list.   thankyou

    Recipe sounded great but my meatballs were tasteless and the kids refused to eat them (they said the rice looked like worms coming out of a brain!!). Freeze the rest for Halloween nibbles perhaps! Made as per recipe so not sure why I seem to be the only one not raving about these - I must have done something wrong.

    Great recipe!!!  Very versatile.  I didn't have the right ingredients for the sauce so I just made it up. Also I didn't have zucchini so I used 2 carrots instead. Meat balls were sooo yummy!   My kids are super fussy but enjoyed them. I will definitely make this again. i made my meatballs pretty small so they were done after 30 mins.

    Fabulous recipe! I will cook for less time in future as the sauce was quite thick. I didn't add the egg due to allergies, and added a handful of breadcrumbs. Served with pasta and green beans on the side.

    Loved these, even hubby thought they were great, and he's a meatball aficionado! The mix was a bit wet, but they cooked up well, so moist and tender. For the sauce, I blitzed half an onion and a clove of garlic, then sauteed, added a dash of red wine, veg stock paste and half the passata to make a smaller batch of richer sauce. Plated up the meatballs with steamed veg and poured the sauce over it. YUM!

    I made these last night and they were fantastic and a huge hit with the kids! I have to say that like some of the previous comments the meatball mixture was very wet and sloppy, I had to add breadcrumbs to the mixture. The sauce in the bottom needed more flavour so I added more stock, Worcestershire sauce and onion powder.  There was also heaps more mixture to fit more than the two varoma tray/dish so I made my meatballs slightly bigger, and they were cooked in 40 minutes (didn't need the full 60 minutes). Love how the rice sticks out once it's cooked, very cute and a novelty for the kids! Thank you for sharing your recipe!
