Recipe's preparation
Add all ingredients in the order listed into the TM Bowl.
Mix for 2 mins on speed 5 (you may like to stop at 1 min and scrape around).
Preheat oven to 160C.
Evenly distribute your batter into your cupcake cases. The quantity on this recipe depends on the size of your cases, of course- my recommendation is to fill your cases to just under 1/2 way if you would like cupcakes that finish to the rim of the cases - at 1/2 way they will rise a little higher as my picture shows- up to your personal preference!
Place into oven for about 22 mins.

I usually double the recipe (same time in thermie).
This is based on a Donna Hay recipe where everything is added at once- love how easy it is and when you eat these they come away from paper cases easily and when you bite into them (or if you are one of those people who likes to break pieces off to eat them), you don't have crumbs falling everywhere! I made a double batch but
I made a double batch but still added more milk as the mixture was quite thick. I think next time I will make it again but 2.5 x the mixture as I filled them half way but they could have been fuller. Mixture and the baked product was delicious. Husband and son both approve.

However the quantities are followed from the original Donna Hay recipe so it won't be the same as the original recipe Agreed - it is dense batter though it is to produce a cupcake that is substantial rather than full of air like a lot of others (and holds together well when eating, because of that).

I noticed a few other comments stating that the batter was too thick and the cupcake was quite dense. This also happened to my first batch which made me wonder what I'm doing wrong as so many are raving about this recipe. I liked that it was a quick and simple recipe, but hope someone can help out with possible mistakes I made?

Hi Sammy, definitely try cooking them a bit longer - perhaps 35 minutes would do it? Test with a skewer (or I use a dried spaghetti if it's easier to find!), to make sure the centre is cooked through.

My go to recipe for cupcakes (and I can't bake!! ). Have made these several times now and they turn out perfect every time. The kids loved them!!! I just find that if doubling the mix, I sometimes need to double the mixing time to make sure it's evenly mixed.
