  • 3 star anise
  • 0.25 tsp whole cloves
  • 1 tsp sichuan peppercorns
  • 1 tsp Black Peppercorn
  • 1 cinnamon quill
  • 4 cardamom pods
  • 2 tbsp sesame seeds
  • 2 bay leaves
  • 5 garlic clove
  • 2 cm fresh ginger
  • 4 green onion
  • 0.5 cup gochugaru
  • 2 cups of oil
  • 2 tsp Pink Himalayan Salt
  • 0.5 level tsp brown rice vinegar

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

  1. Add 3 star anise, 1/4 tsp cloves,1 tsp sichuan pepper, 1tsp peppercorn 1 stick cinnamon, 4 cardamom pods, 2 bay leaves, 2 tbps white sesame seeds
  2. 6 min/Varoma/speed 1
  3. Transfer the spices into a heat proof clean jar
  4. In the jar, add 1/2 cup gochugaru, 2 tsp Himalayan pink salt, splash of rice vinegar
  5. To the Thermomix bowl, add 2 cm fresh ginger, 4 sticks green onion, 5 garlic cloves
  6. Chop 5 sec/speed 5
  7. Add 2 cups oil
  8. 15 min/Varoma/Gentle stir setting
  9. Let the infused oil cool down for a few minutes.
  10. Transfer the oil through a sieve to the jar with the spices. You can use the oil directly or let it mature for a few weeks.

Tip

Gochugaru is a korean chilli powder. It can be found in most asian supermarkets

Use oil such as sunflower, canola, peanut or even avocado oil.

You can enjoy this oil straight away but it tastes better if you let it age in your pantry for 2-3 weeks.
