Chilli cheese fries

  • 150 g cubed tasty cheese
  • 1 onion
  • 1-2 Red Chillies
  • 2 cloves garlic
  • 15g olive oil
  • 400g Diced Tinned Tomatoes
  • 2tsp handful of fresh parsley or coriander or a teaspoon of dried mixed herbs (optional, don't worry if you realise at the last minute that you haven't got any at home). If using fresh herbs you can chop them in the Thermomix at the start.
  • 1tsp sugar
  • 2tbsp tomato paste
  • 2tbsp TMX vege stock concentrate
  • 1 pkt Frozen chips
  • Oil for deep frying
  • salt and pepper to taste

Recipe's preparation

    Chilli cheese fries
  1. Grate cubed cheese 6secs speed 7, remove and set aside

    Add onion, chilli, garlic to bowl and chop for 6 secs speed 7, scrape down sides of bowl and add garlic, saute 2 mins 100 degrees speed 1

    add remainder of ingredients, apart from chips and cheese and cook 100 degrees, 30 mins speed 1.

    when sauce has 10 minutes left to cook, fry chips or oven fry for a healthier alternative, once cooked, add salt and then scatter into a shallow oven proof casserole dish

    pour over cooked chilli sauce

    cover liberally with grated cheese

    place under a hot grill until cheese is golden and bubbly

    enjoy with a dollop of sour cream and some sliced green onion tops if you desire!
