Ingredients

Red Cabbage and Chickpea Salad

  • 75 grams Parmesan cheese
  • 1 bunch basil, fresh
  • 1 bunch chives, fresh
  • 1 bunch coriander, fresh
  • 1 red onion, peeled and halved
  • 1 can chickpeas, rinsed and drained
  • 100 grams semi or sundried tomatoes
  • 1/2 red cabbage, chopped in chunks

Dressing for Red Cabbage and Chickpea Salad

  • 1 garlic clove
  • 200 grams egg mayonnaise (made in TM or good quality shop bought)
  • 15 grams white wine vinegar
  • juice of half a lemon
  • salt and pepper to taste

Recipe's preparation

    Red Cabbage and Chickpea Salad
  1. Grate parmesan cheese in TM for 6 seconds / speed 9

    Place cheese into a large salad bowl and set aside

  2. Place basil, chives and coriander into TM bowl and chop for 5 seconds / speed 7

    Place into the large salad bowl with cheese and set aside

  3. Place red cabbage into TM bowl and chop until coarse, 2-3 seconds / speed 4 

    Take care not to overprocess as you want a chunky cabbage salad.  Add cabbage to herbs and cheese in salad bowl and set aside

  4. Place semi or sundried tomatoes into TM bowl and chop for 4 seconds / speed 5  

    Add these to the cheese, herbs and cabbage in salad bowl

  5. Add chickpeas to ingredients in salad bowl and mix thoroughly

  6. Red Cabbage and Chickpea Salad Dressing
  7. Place garlic into clean TM bowl and chop for 4 seconds / speed 6

  8. Add remaining ingredients (mayonnaise, white wine vinegar, lemon juice, salt and pepper) to garlic in TM bowl and combine for 5 seconds / speed 6

  9. Pour dressing into salad bowl containing all salad ingredients and combine well....enjoy!!

Tip

This is a delicious salad served alone or with meat or fish.  It stays fresh in the fridge in a sealed container for up to a week, although mine rarely lasts that long!  It is a great Christmas Day salad with the red cabbage and tomatoes, and green flecks of herbs.  It looks beautiful and tastes great!

    tmrc_emoticons.) Thank you very much this was very yummy! Probably would have been better if I could make  better mayonnaise... I think that is an art that I am not ready for (might get the good store bought stuff for next time)!
