Baked Rice Paper Rolls with Chicken & Vegetables

  • 1/4 cabbage
  • 1 carrot
  • 1 tablespoon hoison Sauce
  • 5 g sesame oil
  • 1/4 red onion
  • 1-2 cooked chicken tenderloins, (*see tips)
  • 1 clove garlic
  • Salt & pepper to taste
  • garlic infused oil for brushing (can use normal olive oil if preferred)

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. 1. Place oven on 220C and line a baking tray.

    2. Place onion and garlic into bowl and chope for 7 secs and spd 3.

    3. Add carrot and chop spd 6 for 2 secs. Check consistency and repeat for 1 sec if preferred smaller.

    4. Add sesame oil and saute for 3 mins, 100C and spd 1.

    5. Add cabbage and chop on spd 5 for 1 secs.  Add Chicken and chop on spd 5 for 1 sec. Repeat if needed. Scrape sides

    6. Add hoisin sauce and salt and pepper. Saute for 3 mins, 100C on Reverse and spd 1. 

    7. Fill a large bowl with hot water from tap and dip first rice paper roll and then place onto plate. Spoonful 3 Tablespoons of mixture into centre of rice paper, then fold bottom over, then sides and then top to make a roll. Continue until all mixture is used.

    8. Place all rolls onto prepared tray and brush with oil, both sides and bake for 40 mins. Flip rolls after 20 mins so they have a crisy skin.

    9. Serve immediately with desired sauce.

Tip

*Chicken can be steamed prior or grilled in a non-stick pan with no or little oil.

*serve with sweet chilli sauce or hoisin sauce.

    Everybody loved these - they were a hit. Only problem I had was that they stuck to the pan & I broke a few when I was turning them over. Absolutely delicious though

    Thanks for your comments. I'm so glad you enjoyed it. I definitely understand it can be difficult when you or one of your family members have intolerances. I myself am gluten intolerant.     This a fantastic recipe. My boys cant have wheat. They can have glutenfree flour and spelt but it takes a bit of time to make the pastry. I made these last night with left over chicken, but I am planning to use the same idea with Fodmap friendly and allergy friendly ( son has multiple allergies) mince meat sausage rolls, chicken and vegie rolls, even a sweet one like, banana and cinnamon. Lots of options. Sons also want to make fodmap spring rolls for them.

    I made a dippng sauce too with gluten free soya sauce, maple syrup and green part of spring onion chopped, and some chilli seeds all whizzed in the thermomix speed 8, for 6 sec.
