  • 100g Butter, Chopped
  • 90g sugar
  • 210g SR flour
  • 1 egg
  • 3 large apples, Peeled & thinly sliced
  • 1/2 tsp cinnamon
  • 1 Tbl sugar

Recipe's preparation

    Preparation
  1. 1 :  peel and thinly slice apples, place in dish filled with water (to retain colour and not turn brown)


    2 :  grease a deep sided 18cm flan tin


    3 :  chop butter and place in TM bowl - melt 60degrees, 90 secs speed 2


    4 :  add sugar - Gentle stir setting 30 secs


    5 :  add flour - Gentle stir setting 30 secs


    6 :  add egg - 10 secs, speed 3


    7 :  spread about two thirds of pastry onto base and sides of flan tin - best done by taking small amounts and pressing with fingers or back of spoon. Pastry will be quite moist almost biscuit like in appearance.


    8 :  drain apples well, and place into flan tin


    9 :  sprinkle with cinnamon


    10 : take small portions of remaining pastry mixture, flatten between fingers, and place on top of apples in random formation.


    11 : sprinkle lightly with sugar


    12 : bake 175 degrees C, for 45 mins

Tip

** cake tin variations, any spring form pan, round cake tin 18cm, square pan 18cm

** if using solid base pan, a couple of strips of baking paper criss-crossed over the bottom will make it easier to remove

** when cooked, the apples are quite firm (as this is a traditional German apple cake), however you can lightly steam the apple if you require a softer centre.

** as can be seen in the photo! the cake stands quite high (because the apples are not cooked before hand), and the topping all cooks together forming the crust.

** variations - you can add 30g sultanas & 30g almond flakes to apple filling.
