Easy Egg and Bacon Pie

Ingredients

Iced Puff Pastry

  • 90 g ice cubes
  • 180 g unsalted butter, frozen, roughly chopped
  • 200 g plain or spelt flour
  • 1 teaspoon sea salt

Filling

  • 250 g bacon
  • 2 stalks spring onion, cut into 5 cm lengths
  • 2 sprigs fresh parsley
  • 250 g cherry tomatoes, optional
  • 6-8 eggs

Recipe's preparation

    Iced Puff Pastry
  1. Place ice and butter into mixing bowl and chop 15 seconds/speed 10.  Scrape down sides of bowl.  Add flour and salt and mix 5 seconds/speed 5.  Scrape down sides of bowl and knead for 2 minutes.  Wrap pastry in plastic wrap and rest for 30 minutes before using.  If it is a hot day place in fridge, otherwise leave on bench to rest.

  3. Preheat oven to 180 degrees.

    Place spring onion and parsley into mixing bowl and chop for 3 seconds/speed 7.  Scrape down and repeat if necessary.  Remove and set aside.

    Add bacon to mixing bowl and chop for 3 seconds/speed 5.  Cook for 5 minutes/100 degrees/reverse/speed 1.  If there is no fat on your bacon you will need to add and bit of oil.

    Whilst this is cooking divide pastry into two portions - make one slightly bigger than the other - this will be the base.  On a floured surface (and sprinkling a bit of flour on top of the pastry as well) roll out the bigger portion to fit the base of your pie dish.  When bacon is cooked remove from bowl and place on pastry base.  Place the chopped spring onion and parsley on top of bacon.  Add whole tomatoes to your pie (if using).  Then crack your eggs straight into pie on top of bacon etc.  Stab the yolks with a fork to spread them out a little.  Sprinkle a bit of freshly ground pepper on top.

    Roll out remaining pastry to similar thickness to base then cut into 1cm wide strips.  Use strips to make a lattice pattern on top of your pie.  Bake for about 45 minutes, or until pastry is lightly browned and eggs are cooked.

Tip

I haven't specified a size of pie dish - just use your favourite.

The tomatoes are lovely in the dish but if you have children who won't eat cooked tomatoes it is still nice without them.

    Great dish. OMG - Loved the pastry! Used a deep pie dish and after I put in the bacon, I thought (oh no, way too big) but no, it took the tomatoes and 8 eggs easily plus the lattice on top. I cannot believe how easy the TMX makes all kinds of pastry. Thanks for this recipe, will definitely be a regular on our menu. 👌

    I love eggs and bacon, and this was no exception. This was really nice, we made it without the pastry and it still turned out well (we added capsicum as well) and only cooked it for 30 min.

    Wow!!! This pie is simply amazing.  Party  l particularly LOVED the delicious pastry and the big chunks of egg through it, so much nicer than the beaten egg recipes. You must try it.  Love
