Ingredients
Sneaty Balls Pea Salad
- 1 --- Bag Frozen Peas, Quickly blanched so just thawed
- 1 --- Handful fresh parsley
- 1 --- Handful fresh mint
- 4 cloves garlic
- 40 g Parmesan cheese, Chopped 2inch cubes
- 1/2 --- Cup oil, Olive, Salad or bean are all fine
- 1 --- juice of lemon
- 2 heaped tablespoons Sweet chilli sauce
- 1 --- handful cashews
- 3 Rashes Bacon, Fried till crispy
- 1 feta cheese, Chopped into small cubes

- Place 1 bag of frozen peas into a pot of boiling water and blanch till thawed and nice to bite.
Place fresh herbs, garlic, cheese, oil, lemon juice, sweet chilli sauce and cashews into mixing bowl and blend on speed 8 for 2min (more if needed - should be a pesto consistancy).
Fry bacon bits in a frying pan.
Combine all ingredients (Pesto, peas, feta and bacon) in a salad bowl and mix.
Method
Tip
If you dont let the bacon cool down and run the peas under cold water before mixing it all together - salad will go brown. Just blanch pease then run under cold water. Let bacon cool for a bit on a paper towel before adding to the salad. Baby peas are the best to use.
