Almond Biscuits (WAPF, grain-free, paleo, gluten-free, vegan)

Ingredients

24 portion(s)

Biscuit dough:

  • 1 1/4 cups --- Almonds raw, Unsalted ("crispy" is best)
  • 1/4 cup --- Almonds raw, Extra, to decorate
  • 125 grams unsalted butter softened, Use coconut oil for vegan option
  • 1 cup --- arrowroot flour
  • 1/2 cup Rapadura, Or coconut sugar
  • 1/2 tsp Himalayan salt
  • --- Rind of 1 Lemon
  • 1 tsp vanilla essence

Recipe's preparation

    Dough prep:
  1. Blitz almonds until a fine meal

     

  2.  Add all other ingredients and pulse until a dough has formed

  3. Biscuits
  4. Roll walnut sized balls of dough with wet hands

  5. Place on a baking tray lined with baking paper

  6. Press and almond into each biscuit

  7. Cook for 5mins at 150'C

  8. Remove from oven and press biscuits down with a fork

  9. Return to oven for another 10-15 minutes

  10. Allow to cool on the tray

    These were yummy but mine went flat. Too much butter perhaps. Might do a second batch with less butter.
