Apple and Cinnamon Loaf

Ingredients

12 slice(s)

  • 70 g brown sugar
  • 1 level teaspoon ground cinnamon
  • 150 g raw sugar
  • 130 g Butter, softened
  • 2 eggs
  • 1.5 teaspoon vanilla extract
  • 350 g plain flour
  • 1.75 teaspoon baking powder
  • 130 g Milk
  • 2 apples, peeled, cored and sliced

Recipe's preparation

  1. Preheat oven to 200 deg cel (180 deg fan forced), and line loaf tin with baking paper.

  2. Mix Brown Sugar and Cinnamon speed 4 / 6 seconds and set aside.

  3. Beat butter and raw sugar speed 4 / 30 seconds. Reduce speed to 3 and add eggs one at a time, then add vanilla extract. Mix til all combined.

  4. Add flour and baking powder, mix speed 5 / 10 seconds.

  5. Add milk and mix speed 4 / 15 seconds.

  6. Pour half of the batter into prepared tin, lay half of the apple over batter. Sprinkle half reserved sugar and cinnamon mix.

  7. Pour over remaining batter. Top with remaining apple slices. Push apple slices into batter and sprinkle over remaining sugar and cinnamon mixture.

  8. Bake for 45minutes or until skewer comes out clean.

Tip

Best served warm with cream or ice-cream.

Can be toasted and buttered if desired.

    This was lovely. I used 100g raw sugar only and it was still lovely and sweet. I added walnuts too. Like others, required about 1hr in the oven. Batter was very thick and difficult to work with, i will definitely soften butter first next time which i'm sure would help as i didn't do it this time. Will definitely make again, thanks tmrc_emoticons.)

    So divine. I left out the bicarbonate as I didn’t have any and used GF plain flour as we are a GF household. So fluffy and delicious. Needed an extra 10 minutes on top of oven time- and our oven is only 3 years old. A great addition for the lunchbox. The assembly instructions made this 🙌🏻

    beautiful cake...took more than an hour to cook..I firstly greased and lined a large loaf tin...changed my mind and used a smaller...should have stuck with the bigger one...had to cover the top with foil to stop over browning. looks beautiful...just needed much longer to cook. thank you for sharing.
