- 50 grams Shredded coconut
- 125 grams vegetable oil

Pre heat oven 180 deg .Combine flour, baking powder, sugar, egg, oil, vanilla, milk in Thermomix: 40 sec speed 5. Add oats, coconut and apricots. Thermomix: 20 sec reverse speed 2. Pour into greased and lined muffin tins either 12 (1/2 cup capacity) muffins or 6 (1 cup capacity) muffins. Bake in 180deg for 30 mins, until cooked.
