Banana Loaf adapted from Mary Berry

  • 100 grams softened butter
  • 175 grams caster sugar
  • 2 large eggs
  • 2 ripe bananas, mashed
  • 225 grams Self Raising Flour
  • 1 level teaspoons baking powder
  • 2 tablespoon Milk

Recipe's preparation

  1. Put butter and Sugar into bowl. Mix for 15 seconds, Speed 5

    Add eggs, Bananas and milk. Mix for 10 seconds speed 4

    Add flour and baking powder, mix for 10-15 seconds speed 5

    The mix should now be a smooth (ish) batter.

    Pour into a greased and lined baking tin (I prefer a loaf tin), and bake in a  preheated oven 180C , 160C Fan, Gas 4 for about an hour or until it is well risen and golden brown. A fine skewer inserted in the centre should come out clean.

The mix can be doubled to make 2 loaves as in the picture.

    Made this again tonight - realised I added the wrong flour - so added bicarb soda and omitted the baking powder and it turned out awesome - so soft and fluffy!

    This is a firm favourite.  Have make this a lot and every time it turns out great.  Found it best to do two individual loaves rather than doubling the quantity.  So easy and tasty to make.  Always goes down a treat in my family and doesn't last long. tmrc_emoticons.)
