If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
1. Preheat oven to 180 degrees C, fan-forced.
2. Line a 12-cup muffin tray with muffin cases.
3. In TM bowl, place flour, baking powder, bicarb soda, salt and cinnamon. Mix 3 secs, speed 4, MC on. Set aside.
4. Without washing bowl, mix bananas, speed 4, 5-10 secs (longer for smoother mixture). Scrape down sides.
5. Add eggs, sugar and butter. Mix 5 secs, speed 5. Scrape down sides.
6. Add 1/2 flour mix. Mix 5 secs speed 3. Repeat with rest of flour mix.
7. Spoon into muffin cases. Bake 20 mins or until golden, turning tray half way through cooking. Enjoy!

Tip
You can decrease the sugar content, and/or replace with your choice of sweetener, e.g.. Coconut sugar.
You can use wholemeal flour if you wish also.
All ingredients are basic pantry items, making this a great way to use up overripe bananas.
