  • 1/4 cup Coconut sugar

  • zest of one orange
  • 3 cups blueberries
  • 1 Vanilla beans scraped from 1 pod

Recipe's preparation

    Method:
  1. 1. Preheat oven to 180deg (fan forced)

  2. 2. Place he blueberries evenly distributed in the baking dish

     

  3. 3. Whisk eggs 6 seconds, speed 5

  4. 4. Add coconut milk, vanilla beans, orange zest and salt. Mix 6 seconds, speed 5

  5. 5. Add the coconut sugar, almond flour, melted butter and mix 6 seconds, speed 5

  6. 6. Pour the batter evenly over the blueberries and place in the oven for 30minutes or until golden and cooked through. Remove and let cool for ten minvites before serving

    I made this for my entire family & they all loved it. My brother even asked for the receipe.

    I will probably only use the zest of half an orange next time as it over powered the taste of the blueberries

    Hi Dobbie564, no need to insert the butterfly whist - I didn't use it for the recipe. We really enjoyed this over the weekend! Good luck if you make it yourself.
