Cupcakes

  • 60 grams Maple syrup
  • 160 grams Milk
  • 120 grams Dark Brown Sugar
  • 150 grams Butter, chopped
  • 75 grams white chocolate, chopped
  • 150 grams plain flour
  • 50 grams Self Raising Flour
  • 1 --- egg

Frosting

  • 175 grams Dark Brown Sugar
  • 100 grams Butter
  • 1/4 teaspoon salt
  • 60 grams Milk
  • 1 teaspoon vanilla extract
  • 160 grams icing sugar

Recipe's preparation

    Cupcakes
  1. Add maple syrup, milk, sugar, butter and chocolate to bowl and cook 3min/100 degrees/speed 2, until melted.

  2. Allow mixture to cool until temp reaches 50 degrees (approx 10 mins).

  3. Add both flours and mix 20 secs/speed 2.

  4. Add egg and mix 40 secs/speed 3.

  5. Divide the mixture between 12 cupcake cases and bake for 18 minutes Or until cooked when tested with a skewer.

  6. Frosting
  7. Place sugar, butter and salt in bowl. Cook for 5 minutes/80 degrees/speed 2, until the sugar has dissolved.

  8. Add milk and vanilla and cook 5 minutes/Varoma temp/slow spoon speed.

  9. Add icing sugar and mix for 20 seconds/speed 2. 

  10. Spoon mixture onto cupcakes and allow to cool and set.
