Caramel Slice (Paleo, vegan, raw, egg free, dairy free, gluten free)

Ingredients

24 portion(s)

Base

  • 100 g dates, pitted
  • 80 g coconut dessicated
  • 1 tablespoon Cocoa/cacao, or carob

Caramel

  • 240 g macadamia nuts
  • 220 g dates, pitted
  • 1 tsp Vanilla Exract

Chocolate Topping

  • 100 g maple syrup (real)
  • 125 g coconut oil melted
  • 2 tbsp Cocoa/cacao, or carob

  • 100 g dates, pitted
  • 80 g coconut dessicated
  • 1 tablespoon Cocoa/cacao, or carob

  • 240 g macadamia nuts
  • 220 g dates, pitted
  • 1 tsp Vanilla Exract

  • 100 g maple syrup (real)
  • 125 g coconut oil melted
  • 2 tbsp Cocoa/cacao, or carob

Recipe's preparation

    Chocolate Base
  1. Put all ingredients in mixing bowl and blend Speed 7 for 30 secs.

    It should be moist and crumbly.

    You may need to add more dates.

    Press into a square plastic container or divide into silicon muffin molds with the back of a spoon.

  2. Caramel Filling
  3. Put all ingredients into mixing bowl.

    Blend 20 seconds speed 5, then 30 seconds speed 7.

    Mix should be smooth and glossy.

    Press into pans with back of a spoon

  4. Chocolate Topping
  5. In a bowl mix ingredients until smooth.

    Pour over top of slice and freeze

    This was a winner with everyone big & small. After reading comments adjusted MS to 60g & CO to 100g. Super sweet so cut into inch squares but they're still disappearing from the freezer rapidly.

    I absolutely loved this slice. So easy to make and delicious. I also reduced the topping ingredients - maple syrup to 60g and coconut oil to 100g. I also mixed it in the thermomix for ten seconds rather than using a bowl. Perfect. Thank you for the recipe.  tmrc_emoticons.)

    OMG Delicious!!!!!! I blitzed the base and filling for a bit extra time and reduced maple syrup in topping to 60g and coconut oil to 100 g and it worked out perfectly.

    Delicious! Such a yummy treat! I blitzed the base and filling for a bit more time. For the topping I reduced the maple syrup to 60g and 100g coconut oil and it worked out fine.

    tmrc_emoticons.) Thanks so much this was beautiful!  I am currently gluten and dairy free and this was a great snack for a breastfeeding mummy!  Also my husband and older children LOVED it and said it tasted like normal caramel slice!  Will be making again soon!

    This recipe is delicious!

    When I converted it from Wholefood Simply I got only 110g of coconut oil in the topping & less macadamias in the filling - still worked out perfect - good amount for a slice tin if you don't have silicon molds (just remember to use baking paper!)

    Oooh my goodness - SO YUMMY! Thanks for sharing this recipe. I found this made 14 portions, with the silicone holders being of average size. I will try a touch less coconut oil in the chocolate topping next time though, or more Cacao - or both! This recipe will be a keeper!!! Delicious from the freezer, as promised  tmrc_emoticons.;)
