Chelsea's Banana & Date Loaf

  • 125 g Butter, Softened
  • 45 g brown sugar
  • 155 g white sugar
  • 2 eggs
  • 3 ripe bananas, About 245g
  • 80 g date, pitted, raw
  • 260 g flour
  • 230 g yoghurt
  • 1 level teaspoons baking powder
  • 1 level teaspoons bicarbonate of soda

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Preheat oven to 180°C

    Line a loaf pan with baking paper and set aside.

    Weigh in butter and sugars

    Speed 5 for 15 seconds

    Scrape sides

    Speed 4 for 5 seconds

    Scrape sides

    Add eggs

    Speed 4 for 5 seconds

    Scrape sides

    Weigh in bananas and dates

    Speed 5 for 10 seconds

    Scrape sides

    Weigh in flour, baking powder, baking soda and yoghurt

    Speed 4 for 8 seconds

    Bake for 50-60 minutes or until a skewer comes out clean.

    OPTIONAL - FOLD IN 30G CHOPPED WALNUTS BEFORE POURING INTO LOAF PAN
