Recipe's preparation

    Method
  1. Scroll Dough

    1. Add butter, milk and yeast to TM bowl and heat 2min/37C/speed 2.

    2. Add flour, salt, sugar and cardamom and mix 6 sec/speed 6, then knead 2 min  /  .

    3. Dough will be slightly sticky. Transfer dough into a bowl and gently form into a ball.  Cover with a tea towel/plastic wrap.  Leave to prove in a warm place for 40 min or until doubled in size.

    4. Transfer dough to lightly floured bench top. Roll into 1/2cm thick rectangle.

    5. Spread softened butter over dough, sprinkle with cinnamon and sugar, then roll into a log and slice into 12 equal slices (scrolls).

    6. Transfer scrolls to a baking tray lined with baking paper. Let them rise again for 30 min, or until nearly doubled in size.

    7. Pre heat oven. For buns bake at 225-250 degrees for 5-10 mins. For plaits or larger rolls, 200-225 degrees for 15-20 mins.

Tip

Dairy free option- replace milk with Soy, nut or rice milk, replace butter with coconut oil, or ghee.

Options- excellent with white spelt instead of plain flour. Can use coconut sugar for a non refined sugar alternative. Also excellent with honey instead of sugar!

Decoration options - sprinkle with chopped almonds, or baste with whipped egg before baking for shiny finish.

When baking a plait, take care as outside can be brown yet inside raw, adapt temperature and time in oven for size of Plait.

Converted from my mother's recipie, from Sweden.

Thank you for this recipe, reminds me from home (Finland). Not as good as my mum's made, but I guess nothing will ever compare to your mum's baking.  tmrc_emoticons.)  Note to myself, next time make two batches since I have already eaten half of them and not willing to share The rest with the kids or hubby  tmrc_emoticons.)

Best recipe EVER!! So nice to finally have a kanel Bullar recipe as opposed to a cinnamon and fruit bun recipe.

These are bliss for a Swede who has been away for too long. Thank you tmrc_emoticons.D
