Crisp Vanilla Custard Powder Cookies (Egg free)

  • 240 g plain flour
  • 60 g vanilla custard powder
  • 230 g Butter
  • 150 g sugar
  • 2 level tbsp Milk, if needed

Recipe's preparation

    Sift dry ingredients
  1. Add all dry ingredients.
    10 seconds speed 4.
    Transfer to a bowl and set aside.
  2. Cream butter
  3. Add butter to bowl and chop for 5 seconds on speed 8.
    Repeat.
    It should be a lovely pale colour.
  4. Add dry ingredients
  5. Mix together 10 sec speed 4.
    Add milk if required to make dough moldable.
    Then 1 minute knead function.
  6. Baking
  7. Roll half-tablespoon size portions of cookie dough into balls and place on a lined baking tray.
    If dough is warm, allow to cool in fridge for 5 minutes.
    Using a fork press gently to flatten and make an impression.
    Bake for 15 minutes or until lightly golden.
    Cool on a rack and enjoy!

Tip

After rolling cookie dough, keep chilled in the fridge until they go in the oven.

If butter warms too much, add more custard powder until the dough is workable.
