Date and Walnut Loaf

Ingredients

2 portion(s)

loaves

  • 200 g dates
  • 170 g brown sugar
  • 230 g water
  • 60 g Butter, chopped
  • 350 g Self Raising Flour
  • 1/2 teaspoon bicarb soda
  • 1 portion egg
  • 100 g walnuts

Recipe's preparation

  1. Preheat oven to 180 degrees

  2. Line base and sides of two loaf tins

  3. Put dates in bowl and chop for 7 seconds on speed 7

  4. Add brown sugar, water and butter to bowl and heat for 2 mins on 70 degrees, speed 1

  5. Check sugar is dissolved. Then heat for 3 minutes on Varoma temp, speed 1

  6. Leave mixture to cool for 10 minutes with the lid off

  7. Add flour, bicarb, egg and walnuts to bowl and mix on reverse speed 3 until combined

  8. Divide mixture evenly between loaf pans and cover the top of each pan tightly with two layers of foil. Bake for 30-35 minutes.

Tip

Serve warm or cold, with butter or a drizzle of honey.

    This is so tasty, thank you! As suggested by others I used 100gm sugar. I also used medjool dates, wholemeal SR flour and an egg I'd thawed overnight in the fridge.

    I don't particularly like dates but this was great!

    Made this for morning tea today. Reduced the sugar to 100g and may even reduce it further next time. I didn't wait for the mix to cool before adding the flour etc. Divided it between my small loaf tin and regular loaf tin. Delicious and went down very well with the family.

    made this today, very easy recipe and very tasty. I too reduced sugar to 100g and omitted walnuts as it's for school.  next time I think I'll just put the whole mixture in one loaf tin as I would have liked more loaf in each slice but I only have the std size loaf tins which were probably too big but definitely worth a try! tmrc_emoticons.8)

    Just made this and am very impressed. I did use almonds instead of walnuts and used 2 eggs. Made 2 loaf tins or 2 rolls and a small loaf tin Cooking 7
