- 220 g dark brown sugar

- 2tsp cardamom
- 260 g SR flour
- 100 g hazelnuts or walnuts
- 1 tsp Bicarb. Soda

Recipe's preparation
1) Place dates, sugar, butter and water in TM bowl and heat for 5 mins at 100*C on Reverse Speed 2
2) Add spice, flour, nuts, soda and coconut and mix for 5 secs on speed 6. Check to see all is mixed together and pour into lined loaf tin 11cm X 25cm
3) Bake at 160*c Fan Forced for 45 mins. Stand in tin for 5 mins.
It is excellent served, warm with butter for morning tea or on a cheese board with extra fresh dates and Brie

I used only 160 g of sugar and half of the cardamom but added 1/2 tsp of cinnamon and nutmeg.
i also used a supermarket gluten free flour. Yum, a family favourite.

Nice date loaf recipe. I like the chunkiness of the dates & walnuts, although, of course, you can wiz it up more if you like a smooth loaf.
I'm not a huge fan of that much Cardamom, so next time I'll use the same amount of Mixed Spice. You could also use a combination of Cinnamon & Nutmeg.
And in answer to a previous question, Date Loaves don't contain eggs. I think the combination of the hot water & baking soda gives the lightness that eggs usually would in a cake.
