This recipe has saved my day today! It was my daughter's last day at the childcare today and I struggled to come out with something to bring for the kids and teachers (being not very organised and left it till the very last minute this morning). While panicking for almost 1 hour looking through online recipes (with whatever ingredients I had left in the pantry) because my Thermomix happened to be in the dishwasher! Contemplated to make cupcakes traditional way, but thank god the Themomix was ready washed in time and I decided to give it a go on this recipe! Couldn't believe how easy and quick it was!! Cookies all prepared, baked, and packed in gift packs within one hour, and off we went to the Childcare! THANK YOU!!!

Thanks for a yummy and easy recipe!
I played around a bit and subbed 60g of buckwheat and 60 g of almond meal for the plain flour and used w/meal SR flour. Also, decreased sugar to 100g.
