- 200 grams Butter, (softened)
- 350 grams icing sugar
- 2 tablespoons whipping cream, optional

Recipe's preparation
1. Cream icing sugar and butter together on speed 4 for 30 seconds. Scrape down sides and beat for a futher 10 seconds. If using cocoa or fruit rind, at this to the TM with the butter and icing sugar.
2. Insert the butterfly attachment. Turn to speed 4, and while blades are running (speed 4) add 2 tablespoons of whipping cream [if desired] and any liquid flavourings you wish to use through the lid and beat for 10 to 15 seconds/speed 4. Do not beat for longer then 20 seconds.
3. Spread or pipe on a 8" cake or pipe or 12 cupcakes. This allows a generous serving!
Sprinkle with decorations if wished.

Tip
This makes a very generous amount of icing. If you want a smaller amount of icing, use 250 grams of icing sugar with 150 grams butter.
Dry optional flavourings can be added at stage 1:
2 Tablespoons cocoa, 2 Tablespoons orange rind, or 2 tablespoons lemon rind.
Lliquid flavourings can be added at stage 2 with the cream:
vanilla essence, rose essence, etc.I have used three pureed strawberries and one teaspoon of vanilla essence. Delicious.
I sprinkled the frosting with dried orange rind in the picture. To make the orange rind mix, I mixed orange rind and sugar, and dried the mix in a 50C oven for half an hour.

Worked really well. i didn't add the cream as I didn't have any just a bit of milk instead. There was heaps of leftovers after icing 26 cupcakes.

Great recipe! The butter cream has great texture that holds well even when my cupcakes were not refrigerated on a warm day. Good to know when you take elsewhere when fridge space is an issue. I did the chocolate butter cream and topped the cupcakes with crushed peppermint choc - delish! Will be making again with different variations..thanks for an awesome recipe!!
