Gluten Free Coconut Lemon Syrup Cake

  • 120 g Butter, soften in ™ 40sec 50 sp 4
  • 120 g ground almonds
  • 60 g Coconut
  • 2 tsp baking powder
  • 130 g Coconut sugar
  • 2 eggs
  • 60 g Milk
  • rind of 1 large lemon
  • 1 tsp lemon juice

Recipe's preparation

    Preheat oven to 180C
  1. Grease and line two 22cm round cake tins with baking paper.

    Put all ingredients into the TM bowl

    Mix for 10 seconds on speed 4 

  2. Pour into tins and bake for 20 mins.


Accessories you need



I sprinkle with some coconut chips for decoration.  This is delicious with a cup of herb tea, very moreish and gluten free to boot!

    This sounds like something I'd enjoy & I'd like to make it but have a couple questions please.

    It's called a syrup cake but It doesn't seem to have any syrup? Also, does it make two small cakes to eat separately or are they meant to be sandwiched together with something?
