Gluten Free Old Fashioned Sultana Biscuits

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Method
  1. 1. Pre-heat oven to 170°C and line baking trays with gladbake paper

    2. Add chopped butter, sugar and vanilla extract to Thermomix Bowl and mix for 1min/Sp3.


    3. Add egg and milk and blend 30sec/Sp4.


    4. Add the flour and xanthan gum and blend 20sec/sp4. Scrape down sides and repeat.

    5. Add the sultanas and mix 10/sec/Rev/Sp4.


    6. Drop teaspoons onto lined trays and bake for 15-20 mins.

    7. Allow to cool on tray before removing to cake cooler.

Tip

This is a biscuit recipe from a friend - I have just converted to gluten free and thermified it. You could use a mix of sultanas and choc chips.

I find it easier to empty mixture from the Thermomix bowl into another bowl - just easier to spoon from bowl rather than fighting with the blades in the thermomix.
