Hokey Pokey Biscuits

Ingredients

24 piece(s)

Biscuit dough

  • 125 grams Butter
  • 220 grams raw sugar
  • 1 tablespoon Milk
  • 1 tablespoon golden syrup
  • 1 teaspoon bicarb soda
  • 200 grams plain flour

Recipe's preparation

    Method
  1. Preheat oven to 130°C. Line a tray with baking paper.

  2. Add raw sugar and mill for 7 seconds, speed 9.

  3. Add butter and mix for 10 seconds, speed 8.

  4. Set aside sugar and butter. Do not clean bowl.

  5. Add milk and golden syrup and mix for 1 min, 100 degrees, speed 2.

  6. Add bicarb soda and mix for 10 seconds, speed 4

     

  7. Add sugar, butter and flour and mix for 30 seconds, speed 4 or until well combined.

  8. Let biscuit dough stand for 5 minutes or until cool.

  9. Roll teaspoon of mix into a ball and press slightly onto baking tray. Bake for 20 minutes or until golden brown.

Tip

These biscuits have a lovely honeycomb type taste.

Don't be tempted to add more bicarb soda. If this happens, the biscuits will have a strange bicarb taste.

    I haven't tried one yet but I am sure they will be great.

    Mine took around 40minutes to cook but that is probably because I made them a bit bigger than they should have been.

    I had another look at the recipe and I think it does need some extra flour. I'll edit it. So thanks for that!

    i am in Australia and we use celcius degree measurements. My cookies were flat and undercooked. I thought temp might be the problem? We still ate them though!
