Ingredients

Vanilla dough

  • 200 g almond meal
  • 90 g Butter, unsalted
  • 40 g sweetener, I use natvia
  • 1 pinch salt
  • 1 teaspoons Vanilla Paste

Chocolate dough (as above plus the below)

  • 30 g cacao powder, raw
  • 10 g sweetener, Extra

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.       If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

    Vanilla batch
  1. Weigh in all ingredients into the bowl. Mix 40 seconds/speed 3.5 until mixture comes together.
  2. This is how the dough should look like after 40 seconds.
  3. Preheat oven (fan forced) 180C.

    Scoop one mini-ice cream scooper per cookie an place on oven mat.

    Bake 8-10 minutes until slightly golden. Let cool completely before removing from tray.
  4. For the chocolate version, add 30 g cacao powder and extra 10 g sweetener (I use natvia).
  5. They do not spread out or change their shape.

Tip

If you don't have a mini ice-cream scoop, you can also use two teaspoons and hand roll the cookies, or roll them in a log and cut slices.

I've also used this dough to make lemon tart bases from it. Works a treat tmrc_emoticons.-)
