The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

Tip
If you don't have a mini ice-cream scoop, you can also use two teaspoons and hand roll the cookies, or roll them in a log and cut slices.
I've also used this dough to make lemon tart bases from it. Works a treat
