Kentish Nut Cake

Cake

  • 15 g walnuts
  • 75 g raw sugar
  • 250 g Butter, room temperature
  • 2 eggs
  • 15 g shredded or dessicated coconut
  • 190 g Self Raising Flour
  • pinch salt
  • 5 g cocoa
  • 85 g Milk

Coffee Icing

  • 200 g raw sugar
  • 30 g Butter, room temperature
  • 1 tsp coffee, ground, preferably instant
  • 1-2 tsp hot water

Recipe's preparation

    Cake
  1. Place walnuts in TM Bowl Closed lidand Turbo (closed position)/1-2 seconds.  Set aside.

  2. Place sugar in TM Bowl Closed lidand mill for 3 seconds/Speed 9.

  3. Add chopped butter and mix for 20 seconds/Speed 4

  4. Add eggs and mix for 15 seconds/Speed 4.

  5. Add coconut, walnuts, self-raising flour, salt, cocoa and milk and mix for 20 seconds/Speed 5.  If necessary scrape down sides and mix for a further 6 seconds/Speed 5.

  6. Pour into a well greased 20cm/8 inch cake tin and bake in a moderate oven (180 degrees) for 40-45 minutes.  When cool top with coffee icing.

  8. Place sugar in TM Bowl Closed lidand mill for 10 seconds/Speed 9.

  9. Add butter and coffee to TM bowl Closed lid.  Replace lid and turn dial to Speed 6 and add only enough water, through the hole in the lid, till icing becomes a spreadable consistency.
