- 140 g caster sugar

- 1 tbsp Milk
- 4 egg whites, Room Temperature

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
Heat the oven to 180 degrees
Grease a brownie size baking tin
Add butter, sugar and milk and mix for 30 secs / speed 3
Add the rest of the ingredients & beat well until combined for 1 min / speed 5
Pour into the greased tin & set aside
Make sure the bowl is washed and dried thoroughly
Add the egg whites and beat for 3 mins / 50 degrees, speed 3.5
Set the timer on 2 mins & start to add through the hole in the lid, the castor sugar & cream of tartar until it's finished
The meringue should be thick & glossy
Add the coconut and mix for 10 secs, speed 3
Cover the lemon slice with lemon curd and then spoon the meringue & coconut topping over the lemon slice & bake until golden brown (about 30 - 40 mins)
