Lemon Loaf With Citrus Dessert Syrup

Ingredients

Lemon Loaf

  • 60g lemon juice, (approx. 2 lemons) and also zest of the 2 lemons
  • 120 g unsalted butter, cubed
  • 235 g caster sugar
  • 2 eggs
  • 250 g plain flour
  • 1 tsp baking powder
  • 1 pinch salt
  • 100 g Milk

Citrus Dessert Syrup

  • 170 g white sugar
  • 15 g water
  • 60 g lemon juice, (approx. 2 lemons)

Recipe's preparation

    Lemon Loaf
  1. Line a loaf tin & preheat oven to 180°C
  2. Place into mixing bowl 2 lemon, zest of two lemons
  3. Add 120 g Unsalted Butter - cubed
  4. Add 235 g castor sugar
  5. Add 2 eggs
  6. Closed lid
  7. Mix 2 min/speed 4
  8. Scrape sides down with spatula
  9. Mix a further 10 sec/speed 4
  10. Add 250 g plain all purpose flour
  11. Add 1 teaspoon baking powder
  12. Add 1 pinch salt
  13. Add 100 g Milk
  14. Mix 10 sec/speed 3
  15. Scrape sides down with spatula
  16. Mix a further 5 sec/speed 3
  17. Spoon into tin and bake for 1 hour
  18. Clean and dry mixing bowl
  19. Citrus Dessert Syrup
  20. Before lemon loaf is finished baking make the "Citrus dessert syrup"
  21. Place into mixing bowl 170 g white sugar
  22. Add 15 g water
  23. Add 60 g lemon juice (approx. 2 lemons)
  24. Cook 3 min/90°C/speed 2
  25. Pour hot syrup over lemon loaf, garnish with coconut (optional) and serve.

Tip

After baking loaf and taken out of oven, use a fork or skewer and pierce loaf before adding citrus dessert syrup.
