Louee’s best chocolate cake

  • 250 g plain flour
  • 400 grams sugar, Raw or granulated
  • 90 grams cocoa powder, Good quality
  • 1 level tsp baking powder
  • 1.5 level tsp bicarbonate of soda
  • 1 level teaspoons salt
  • 1/4 litres Milk
  • 1/8 litres vegetable oil
  • 2 --- eggs
  • 1 level tsp Vanilla Paste
  • 1/4 litres Boiling water
  • 1 level tbsp vanilla custard powder
  • 3 level tbsp strong brewed coffee

Recipe's preparation

  1. Add all the dry ingredients to the bowl and mix for 5 secs at speed 7. Check that they have blended nicely.
  2. Next up add the remaining ingredients except the boiling water. Pop the lid on and then mix for 10 secs at speed 7. Remove lid and scrape down edges of bowl with spatula. If necessary, give another mic at speed 5 for a few seconds.
  3. Once the batter is incorperated, add the boiling water and mix again for 4 secs at speed 6. Scrape down sides and mix briefly again if need be.
  4. Into a prepared 20cm round springform tin, pour the batter. It seems runny but that is AOK. Bake for 70 minutes in a 150 degree oven.
    More or less time depending on your oven but test with a skewer.
    Let cool in tin before removing. Dust generously with icing sugar and serve with whipped cream or icecream or maybe a bit of both.
