Ingredients
Base
- 100 grams Butter, Chilled and chopped
- 50 grams caster sugar
- 150 grams plain flour
Caramel
- 150 grams Butter, chopped
- 1 cans sweetened condensed milk, 395 g can
- 100 grams golden syrup
Chocolate Top
- 250 grams dark chocolate, broken into pieces
- 1 tablespoons vegetable oil

- Preheat oven to 160°C
Place 150gm plain flour. 100gms butter. 50gm caster sugar in TM bowl and mill 10 sec/speed 6.
Then dough setting"Dough mode" for 30 sec.
The mixture will be crumbly. Tip into lined greased tin 8" square. Press down with back of spoon
Bake for 20 mins - do not let get too brown.
Cool completely before adding the caramel. - Place golden syrup, butter and sweetened condensed milk into TM bowl and heat 5 min/100°C/speed 3. Measuring cap off
Then 20 mins Varoma Speed 3.
Use simmering basket on top
Pour over the cooked base and leave on bench top for 20 minutes. Then Refrigerate to set - about 1 hour. - Place chocolate and vegetable oil into TM bowl
and melt 3-5 min/50°C/speed 3.
Spread the chocolate mixture over the caramel and refrigerate for 2 hours or until set. Slice to serve.

Tip
The vegetable oil with the chocolate helps with cutting when cool.
Store in airtight container for up to a week.
The base can be cooked the day before.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
