  • 50 g buckwheat flour
  • 50 g potato starch, Bob’s Red Mill
  • 40g g arrowroot flour
  • 1/4 tsp xanthan gum, or chia seeds
  • 1 tsp bicarbonate of soda
  • 35 g Soft brown sugar
  • 50 g Vegan butter or Nuttlex
  • 200 g Vegan chocolate chips, Sweet William brand is good
  • 50 g Maple Syrup, pure
  • 1 tsp Vanilla Paste

Recipe's preparation

    Method
  1. Pre-heat over to 180 degrees and line two baking sheets with baking paper or silicone mats.


    Gentle stir settingWeigh in all the ingredients in the order listed. Mix for 10 seconds/Reverse/Speed 5



    Using a teaspoon, place mixture onto the lined baking tray, squashing each cookie down. Ensure you leave a gap between each cookie, they will spread.



    Bake in the oven at 180 degree, 7-10mins. Don’t over cook, they will firm up after cooking. The aim is for slightly crispy, chewy cookies.



    Leave to cool slightly then transfer to a wire rack.
