Spiced Pumpkin Cake (Egg, Nut and Dairy Free)

  • 280 grams flour
  • 3 teaspoons baking powder
  • 1 teaspoon baking soda/bicard
  • 1 teaspoon salt
  • 2 teaspoons cinnamon
  • .5 teaspoon Nutmeg
  • .5 teaspoon ground cloves
  • .5 teaspoon ground ginger powder
  • 100 grams unrefined cane sugar, use dark sugar if you don't have thi
  • 1 apple
  • 1 teaspoon vanilla
  • 30 grams water
  • 60 grams coconut oil, or another oil of your choic
  • 250 grams pumpkin

Recipe's preparation

  1. Preheat oven to 180 degrees celsius

    Grease a cake tin, or loaf pan

    Place 500g water in the Thermomix bowl, cut pumpkin and apple and place in the steaming basket. Steam for 15 minutes on varoma

    Allow to cool

    Add remaining ingredients

    Mix on speed 5 for 2 mins. 

    Pour into the cake tin or loaf pan and bake for 40 to 45 minutes

     

    I iced with a mix of Toffuti, icing sugar and 1 teaspoon of vanilla paste
