Cake
- 300 grams caster sugar, Can be reduced as that's a lot.
- 125 grams softened butter
- 250 grams MediumTo Very Ripe Bananas
- 1 teaspoon vanilla
- 2 eggs
- 225 grams Self Raising Flour
- 1/2 teaspoon bicarbonate soda
- 120 grams Milk or Buttermilk
Cream Cheese Icing
- 90 grams cream cheese
- 45 grams Butter, softened
- 210 grams icing sugar
- 1 tablespoon lemon juice

Recipe's preparation
- Preheat oven to 170°C. Grease & line a 22cm x 18cm cake tin.
- Place caster sugar (mill on speed 7 for 3 seconds if using raw sugar), butter, banana, vanilla, & eggs into TM bowl and mix on speed 6 for 1 minute. With about 10 seconds to go, add milk or buttermilk.
- Add flour & bicarbonate and mix on knead mode.
- Bake for about 50-60 minutes or until a skewer or knife inserted into the centre of the cake comes out clean.
- Take cake out of the oven and leave to cool on a wire rack.
Clean & dry TM bowl before commencing with icing. - Mix cream cheese & butter on speed 4 for 10 seconds.
- Add icing sugar & lemon juice and mix until smooth.
- Once the cake has cooled, spread with cream cheese icing.
