Cake

  • 300 grams caster sugar, Can be reduced as that's a lot.
  • 125 grams softened butter
  • 250 grams MediumTo Very Ripe Bananas
  • 1 teaspoon vanilla
  • 2 eggs
  • 225 grams Self Raising Flour
  • 1/2 teaspoon bicarbonate soda
  • 120 grams Milk or Buttermilk

Cream Cheese Icing

  • 90 grams cream cheese
  • 45 grams Butter, softened
  • 210 grams icing sugar
  • 1 tablespoon lemon juice

Recipe's preparation

    Cake
  1. Preheat oven to 170°C. Grease & line a 22cm x 18cm cake tin.
  2. Place caster sugar (mill on speed 7 for 3 seconds if using raw sugar), butter, banana, vanilla, & eggs into TM bowl and mix on speed 6 for 1 minute. With about 10 seconds to go, add milk or buttermilk.
  3. Add flour & bicarbonate and mix on knead mode.
  4. Bake for about 50-60 minutes or until a skewer or knife inserted into the centre of the cake comes out clean.
  5. Take cake out of the oven and leave to cool on a wire rack.
    Clean & dry TM bowl before commencing with icing.
  6. Cream Cheese Icing
  7. Mix cream cheese & butter on speed 4 for 10 seconds.
  8. Add icing sugar & lemon juice and mix until smooth.
  9. Once the cake has cooled, spread with cream cheese icing.
