Very Berry Gluten Free Cake

  • 1 cup mixed frozen berries
  • 1/4 cu Coconut sugar
  • 2 free range eggs
  • 2 teaspoons vanilla essence

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Pre-heat your oven to 160°C
  2. Place your berries into your TM Bowl 3 minutes/100°C/Speed 2
  3. Put your banana into the TM Bowl 10 seconds/Speed 5.
  4. Add remaining ingredients to the TM bowl 30 seconds/Speed 5
  5. In an oiled and floured tin (we used a 7-cup capacity tin) add cake mixture.
  6. Bake your cake in the middle of your oven for 50-55 minutes or until cooked through when skewer comes out clean when using the ‘skewer test’.
  7. Allow to cool in tin for 5-10 minutes before transferring to a wire rack.
