Wholesome Raspberry and Coconut Muffins

  • 80 grams unsalted butter
  • 150 grams raw sugar
  • 1 egg
  • 1 teaspoons vanilla extract
  • 370 grams wholemeal self-raising flour
  • 30 grams dessicated coconut

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Preheat oven to 180 degrees. Place patty cases into a muffin tin.
    Add butter, raw sugar and vanilla to bowl. Mix 30 secs on speed 3.
    Add egg. Mix 30 secs on speed 3.
    Add remaining ingredients except raspberries. Mix 30 secs on speed 3. Scrape sides of bowl. Mix 10m secs on speed 3. Do not overmix.
    Add raspberries and stir through gently with spatular.
    Fill patty cases.
    Bake 20-25 minutes until golden on top and cooked through.

Tip

Great for lunchboxes as they don't contain nuts.
Top with cream cheese icing (see Basic cookbook) if desired.
