- 600 g pure cream
- 500 g chilled water
- 1-2 pinches Quality Sea Salt
- 40 g Grapeseed Oil

TM 5Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
Insert Butterfly whisk. Pour pure cream into the mixing bowl, beat for 1-3mins/speed 4 or for as long as it takes the solids to separate from the liquid.
Remove the butterfly whisk
Place the simmering basket over a bowl, pour the contents of theinto the simmerng basket and drain off the liquid. Reserve the buttermilk for future uses.
Place the solids back into the, add the water and mix for 10-15 sec/speed 4. The solids will separate from the liquid. Pour solids into the simmering basket and drain. I do not reserve this liquid for future use at this stage.
Place solids back into the, add the salt and grapeseed oil. Mix for 5-10sec/speed 4.
Either roll into shape or place into jar/container for use. Refrigerate
