Carrot Cake Porridge

  • 1 carrot, Large
  • 60 grams oats
  • 290 grams Milk of Choice (or Water or 50/50)
  • handful sultanas
  • handful walnuts
  • cinnamon to taste
  • pinch Nutmeg
  • natural yogurt
  • Handful of Blueberries
  • honey, Optional

Recipe's preparation

    Carrot Cake Porridge
  1. Chop Carrot few seconds only speed 5Add oats, milk, sultanas, walnuts and spices to bowl and cook for 10mins/90 degrees/Counter-clockwise operation/speed 2

    Serve topped with natural yogurt, blueberries and honey (optional)

    Can add pineapple, dates aswell.Can be made the night before and stored in fridge and served cold.

    i found this recipe after wanting to create the dish i had eaten at a trendy cafe years ago.

    This is pretty spot on!
    I set it up like a smoothie bowl (just not cold!), with coconut, sunflower seeds & pepitas, and some yoghurt. omitted the sultanas. thanks for the recipe. wholesome and delicious!
    yes the serving is a bit much,so would definitely think of halving it next time.

    Carrot cake porridge - Delicious! A great change from regular porridge. I half the ingredients for a single serve, chop the carrot 3 seconds speed 7 and cook for 7 minutes. I don't add (yukky) sultanas. I have used milk/water and coconut milk/water with good results each time. Five stars! Thanks for sharing!

    Nice flavour but def makes 2 serves!  Will try halving it next time.  Carrot didn't cook either, but I didn't scrape down the bowl after cutting, so will try that and cut it longer and see how it goes.

    Agreed with others - way too big for a single serve, I dropped the oats back to 40g and probably added 120ml milk and 100ml water. Was a nice change for brekkie.

    Loved this recipe!  Delicious.  I used vanilla yoghurt and frozen blueberries.  And ate way too much as it was yum. The toddler seems to like it too which is great, especially with the carrot in it!

    I make this a couple of times a week and have told a few friends (both with and without TM). It's easy to substitute things you don't like or can't eat - almonds for walnuts. Also, I add half an apple. Thanks for sharing.

    This was different. It definately needs the yoghurt, honey and blueberries.  I used sunflower seeds Instead of walnuts.  I think it will be one of those dishes  where the more often you eat it,  the more you will like it.

    Great idea! I will definitely halve the portions next time as I think it serves 2 better than one. I didn't have sultanas so I added a dried date with the carrot at the start and that was enough sweetness for this dish.

    This was really yummy! Agree with some of the comments though that it's not just a one person serve - this gave me two serves. Also, I had no walnuts in the house, so used almonds, which worked really well, and I sprinkled with some craisins rather than blueberries (I didn't have any of them either!)

    I whipped this up as a weekend breakfast treat. Tasted a bit like warm carrot cake batter. Love that the recipe was sugar free. i just drizzled a little honey & extra walnuts to serve. This recipe made enough for 2 serves.
