Pancake Batter
- 1 large banana, Peeled & roughly chopped
- 1 Cup of fresh or frozen spinach
- 3/4 Cup of rolled oats
- 2 eggs
- 1/4 Cup of tinned coconut milk
- 1 tsp ground cinnamon
- 1 tbsp coconut oil

- Grind the oats for 10 secs./speed 10.
- Add the banana for 5 secs./speed 10.
- Add the egg, cinnamon, spinach and coconut milk and mix for 5 secs./speed6.
- Melt the coconut oil in a frying pan over a medium heat.
- Once the oil has melted, pour 1 tablespoon amounts of the pancake batter evenly into the pan to make mini pancakes. Flip over when the pancakes start to bubble and no longer look 'gooey'. This will take about 2-3 minutes. Repeat until all the batter is used up.
- I make a batch and keep them in the fridge to serve for a few days.
