Clone of Zucchini Relish

Ingredients

1 litre(s)

relish

  • 1 brown onion, cut into 1/4
  • 700 grams zucchini, chunks
  • 1 capsicum red, rough chopped into 1/4
  • 420 grams Corn
  • 200 grams sugar, raw
  • 4 teaspoon tumeric powder
  • 4 teaspoon mustard powder (dry mustard)
  • 1 tablespoon curry powder
  • 1 tablespoon salt, sea
  • 2 tablespoon plain flour
  • 250 grams vinegar

Recipe's preparation

    relish
  1. Place onion into TM bowl and chop 2 secs speed 7 set aside.

    Place zucchini and capsicum into TM bowl chop 5 secs speedCounter-clockwise operation or longer if you want it finer.

    Add all other ingredients including onion ,except flour and 1/4 cup of vinegar and cook 30 mins varoma speed 1 Counter-clockwise operation

    Mix flour with remaining vinegar, add to relish , cook 5 mins 100deg speed 2 Counter-clockwise operation

    Transfer to sterilized bottles and seal, let settle for a week before tasting... yum! 

    Good on grilled meat, spread on sandwiches or with cheese and crackers.

Tip

Place steaming basket on lid when cooking so it does not spit.Lleave MC off

    Absolutely love this!
    I used 1 generous Tbsp of cornflour instead of plain flour. Added some minced chilli. Used only 150g sugar. Also used the Baba's curry powder. Gorgeous with a cheese platter. Am going to make again tomorrow, as have lots of home grown Zucchini at the moment. Thanks for recipe!

    Yummy yum yum! Great way to use up the zucchini’s from the garden. I didn’t use the corn, only had mustard seeds instead of powder and next time I will cut out some sugar to approx 150g. Off to make my second batch now!

    Currently have a glut of zucchinis. This relish is perfect for this problem!!!
    I have made it numerous times, omitting some ingredients that i didn't have to hand - once without corn, once without tumeric, once without capsicum and once with marinated capsicum - all turned out perfectly.

    Love this pickle. I didn't use the corn, just a bit more zucchini, and also more flour than the recipe said just to get it thicker. Also cooked it slightly longer - very pleased with the result!! (Did anyone else have problems with the plastic staining yellow from the tumeric??)

    Absolutely amazing. Currently in a pot on the stove in jars to seal. It has a bit of bite but I like that. This is the kind of thing that my Grandmother in Law would make and distribute to the family, so I am looking forward to beating her to the chase and maybe showing her up just a little, because people from my generation "cant cook from scratch" hehe.
