Golden Syrup - doesn't crystallise

  • 100 g brown sugar
  • 30 g water
  • 300 g Boiling water
  • 500 g raw sugar
  • 1 tsp citric acid

Recipe's preparation

  1. 1. Place brown sugar into bowl with 30g water.
    2. Cook 15 minutes / 120 degrees / speed 1 / MC ON.
    3. Add all remaining ingredients.
    4. Cook 45 minutes / 120 degrees / speed 1 / MC OFF.
    5. CARERFULLY pour into warmed, sterilised jars. Mixture will cool as it thickens.

Tip

I have made golden syrup previously and used lemon or lime but found sugar crystalls has formed after just a few days. I have made this one with citric acid instead and still have not yet found any sugar crystals.
