Recipe's preparation

    Honey Almond Bran Flakes
  1. Preheat oven to 160° C. Line four baking trays with baking paper.

     

  2. Add the wheat grain to the mixing bowl and mill 1 min 30 sec/speed 9

     

  3. Add the almonds and baking powder and mill 10 sec/speed 9

     

  4. Add the bran, honey, milk, and water and mix 30 sec/speed 4

     

  5. Divide the dough onto the four pieces of baking paper. Cover the first lot of dough with glad wrap and roll out into an extremely thin flake - it should be almost transparent in places. Remove the glad wrap and repeat for the other lots of dough.

     

  6. Cook the large flakes for 10 min, checking regularly after 5 min, until the flakes look leathery and have crunchy edges. Remove from the oven and reduce temperature to 120° C.

     

  7. Allow the large flakes to cool slightly before tearing into thumbnail sized flakes. Return to the baking trays and bake for a further 20 min, stirring the flakes around every 5 min.

     

  8. Allow to cool completely. Store in a sealed container for up to two weeks.
